Mary Shea Aldsworth’s Irish Bread

Mary (Fred Parker’s great grandmother) immigrated from
Kilgarvan, County Kerry in 1886.  Her granddaughter stated
she brought a version of this recipe with her.
Ingredients
2 cups Buttermilk
4-1/2 cups Flour
1 teaspoons Baking Powder
1-1/2 teaspoons Baking Soda
3 tablespoons Melted Shortening or Oil
1/2 package Raisins (1-1/2 cups)
1 cup Sugar
1-1/2 teaspoons Salt
3 Eggs
1/2 tablespoon Caraway Seeds (Optional)

Directions
Preheat oven to 350 degrees F.
Combine flour, sugar, salt, baking powder, and baking soda. Stir in raisins.
Combine in separate bowl eggs (beaten), shortening, and milk. Add liquid ingredients to dry ingredients, mix to even consistency.  Use greased loaf pans and pour mixture in pans until pans are about half full. Bake for 1 hour.
